health food kick

So, I’ve been on a bit of a health food kick. Jimmy has been going to bed awfully early (think 8pm!), so I’m left with a quiet house. So, with nothing else to do (other than clean the house, finish laundry, etc), I started watching several documentaries on Netflix, and they have motivated me to change the way we eat. My first documentary was called Fat, Sick and Nearly Dead. It’s about a guy who drinks/eats juice for 60 days. At the end, he is much happier, healthier, and is off all the prescription medications that he used to take.

I’m still juicing, but am exploring new veggies and fruit to add to my recipe.
The blender we received for our wedding is finally seeing light. I made a green smoothie with spinach, peanut butter, almond milk, flaxseed, greek yogurt, and banana.

The smoothie is pretty freaking awesome.

I also watched Hungry for Change and they mentioned Chia Seeds. At first, I was like, chia what? But after researching, I found out that they are super rich in Omega 3 fatty acids, and has tons of fiber, AND it’s also good for weight loss. Yay!

Now, I dump a tablespoon of chia seeds in my family’s yogurt, smoothies, cereal, and drinks.


*My son first panicked when he saw the seeds…he thought it was “trash” and was determined to pick every last seed out of his cereal. Mommy, I take out trash! Lol*

I also found this super easy, super tasty quinoa chicken recipe. It tastes just like any ‘ole chicken fingers, but has the added bonus of quinoa : high protein, fiber, iron, and calcium. My son likes to drench them in honey mustard. Delicious.

Last but not least, I’ve been trying different types of salads--other than lettuce with tomatoes and cucumbers.

After making this, my husband mentioned that this was just a chunky guacamole. Ummmm...I guess...

…and the best thing about all this? I’ve lost almost 10 pounds!! Yay!!



  1. i just bought that same pack of chia seeds a few days ago...was so excited to try it but then i got the flu and haven't had a chance too yet. hopefully they are as yummy as everyone has said they are!

  3. Congrats on the 10 pounds girl!! I have to ask, I've heard of flax seeds a ton but have no clue what exactly they are, or if they have a taste to them?? I watched Fat, Sick, and Nearly Dead on netflix too and have been dying to use the juicer I got for Christmas ever since but have been too much of a scaredy cat with knowing what to make!

      The flax seeds don't really have a taste, but depending on how much you put in, you can definitely feel the texture. I get mine bag at TJs =)

  6. That's great about the 10lbs!! I need to get back to eating healthier again. We haven't been able to do smoothies lately as my blender went nuts. I guess it's time for a new one just haven't gotten around to shopping for one. That chicken looks great! And a salad that is basically chunky guacamole sounds good to me!
